For the casserole:
- 600g lean lamb mince
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced

- 1 zucchini, diced

- 1 tablespoon lemon juice
- 2 cups no-added-salt diced tomatoes
- 1 cup reduced-salt chicken or vegetable stock
- 1 cup frozen peas
- 1 cup frozen corn
- 1 x 400g can lentils, drained and rinsed
- 1 teaspoon paprika
- 1 teaspoon dried oregano or thyme
- Black pepper to taste
For the rice:
- 1 cup uncooked white rice
Method
- Cook the rice according to packet directions and set aside.
- Heat olive oil in a large pan or pot over medium heat. Add the lamb mince and cook until browned, breaking it up as it cooks.
- Add onion, garlic, carrot and zucchini. Cook for 5 minutes until softened.
- Stir in flour, paprika and herbs. Cook for 1 minute.
- Add diced tomatoes, stock and lemon juice. Stir well to combine.
- Simmer gently for 20 minutes, stirring occasionally.
- Add peas, corn and lentils. Cook for another 5 to 10 minutes until heated through.
- Season with black pepper to taste.
