Looking for a nourishing family meal that feels warm, hearty and satisfying without being heavy? This healthier lamb casserole is a beautiful balance of comfort and goodness, packed with lean protein, vegetables and fibre-rich lentils.

Served with fluffy white rice, it’s the kind of meal that works just as well for a busy midweek dinner as it does for a relaxed weekend lunch. Better yet, it’s simple to make, freezer-friendly, and a wonderful way to introduce children to wholesome home-cooked flavours.

Ingredients

For the casserole:

  • 600g lean lamb mince
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 tablespoon wholemeal flour (or plain flour)
  • 1 tablespoon lemon juice
  • 2 cups no-added-salt diced tomatoes
  • 1 cup reduced-salt chicken or vegetable stock
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 x 400g can lentils, drained and rinsed
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano or thyme
  • Black pepper to taste

For the rice:

  • 1 cup uncooked white rice

Method

  1. Cook the rice according to packet directions and set aside.
  2. Heat olive oil in a large pan or pot over medium heat. Add the lamb mince and cook until browned, breaking it up as it cooks.
  3. Add onion, garlic, carrot and zucchini. Cook for 5 minutes until softened.
  4. Stir in flour, paprika and herbs. Cook for 1 minute.
  5. Add diced tomatoes, stock and lemon juice. Stir well to combine.
  6. Simmer gently for 20 minutes, stirring occasionally.
  7. Add peas, corn and lentils. Cook for another 5 to 10 minutes until heated through.
  8. Season with black pepper to taste.
  9. Serve spooned over fluffy white rice.
